The beloved ultra-cold series is produced with advanced technology and the highest quality hygiene management.

Miura Suisan has established a new processing plant to make the Extremely Cold Series a safer product and to increase customer trust and confidence. With strict hygiene management, we will produce safer and more reliable quality than ever before.
We are improving productivity to meet customer demands, thoroughly implementing the requirements of ISO22000, and adapting to changing times and environments, all of which will move us into a new era and a new stage. Safe zoning and traffic flow design
We have built a system of zoning for each room that thoroughly optimizes production efficiency and management systems based on specialized consulting, our experience, and our track record.
Pursuing only hygiene will result in poor efficiency, so we will continue to work on improving production efficiency based on hygiene as a standard.

Sanitation management at Miura Fisheries

Planned to acquire ISO22000
With HACCP now fully mandatory, our company has been implementing strict hygiene management based on HACCP. However, we are concerned about the expected performance, risk management, and hazard factors, and are aiming to obtain ISO22000 (international food safety standard) certification.
With the goal of “making the obvious things understandable to everyone,” all employees are working together to thoroughly implement manufacturing processes, hygiene record management, and traceability.

Since we started selling our “Kyokurei” product in 2018, we have received support from many customers. We are now moving to a new stage due to the staleness of our products and the diversification of our customers’ demands. We will continue to evolve while aiming to create products that meet the needs of our customers, as well as to establish safety and improve productivity.


Making the most of diminishing resources
Due to the changing environment, seafood landings are less than half of what they were 10 years ago. Also, fish that were previously landed according to the season have now lost their seasonality.
Miura Suisan is first considering how to address this situation going forward.
In order to make full use of landed fish without waste, they are using unused fish and making effective use of every part of the fish. They are also promoting local production and consumption, including holding morning markets and attracting tourists, from the perspective of contributing to the local community.


Extensive range of extremely cold products
Our Gokurei series started out as a commercial product. Because of this, we inevitably received feedback from consumers such as “it’s difficult to cook” and “we don’t have the skills.” In order to continue to develop and upgrade the Gokurei series, we will develop Gokurei products that can be eaten as is after thawing.
We will also recreate difficult cooking methods and seasonings found in first-class restaurants in collaboration with professional chefs.

Creating products that meet customer needs
Customer demands become more diverse every year. For commercial use, there is a demand for product formats that are easy to provide without much effort due to a shortage of human resources.
From the consumer’s perspective, there is also a demand for products that do not require skill.
At Miura Suisan, we aim to expand our ultra-chilled series to meet all of these needs.
We handle everything from slicing, heating, retort, and sashimi processing.
And we aim to provide Miura Suisan products that are not only convenient, but also delicious and reflect the importance of ingredients, so that they can be sold as a set.
